Pan-Fried Pork Chops

1/2 cup all-purpose flour
1 teaspoon salt
1 teaspoon pepper
1 1/2 lbs pork chops
1/4 cup vegetable oil

1. Combine flour, salt, and pepper in large bowl.
2. Dredge each pork chop in the mixture to coat evenly. Shake off excess flour.
3. Heat oil in large skillet over high heat.
4. Add chops to skillet and cook for 1 minute on each side until brown & crispy.
5. Drain on paper towels, serve and enjoy!

Stuffed Pork Chops

8 center-cut pork chops, trimmed
2 teaspoons thyme leaves (crushed)
salt & pepper (to taste)
3 tablespoons butter
1 cup chopped onion
1 cup chopped apple (peeled)
1 1/2 cups cornbread stuffing mix
1/2 cup water

1. Preheat oven to 425*F.
2. Season pork chops with 1 teaspoon thyme leaves and salt & pepper.
3. Melt 1 tablespoon butter in large skillet over medium-high heat. Add pork chops to skillet and cook 3-4 minutes on each side, until no longer pink. Transfer chops to a baking pan.
4. Melt 2 tablespoons butter in same skillet. Add onions and apples. Cook until soft (about 5 minutes).
5. Add stuffing mix, water, and 1 teaspoon thyme leaves. Cook 2-3 minutes until water is absorbed and stuffing is moist.
6. Place 1/4 cup of stuffing on each pork chop.
7. Bake 5-8 minutes until stuffing is crisp and lightly browned.
8. Serve and enjoy!
