Ingredients: 3 lbs short ribs or flanken 1 cup ketchup 1 cup water 1 tablespoon vinegar (white)
1 tablespoon mustard 1 tablespoon horseradish 1 tablespoon sugar 1 teaspoon salt 1/4 teaspoon ground black pepper 1 bay leaf 2 onions
Directions: 1. After washing short ribs, arrange them in a baking pan. 2. In a large bowl, mix all ingredients except onions. Pour into the baking pan to cover the meat. 3. Slice onions and place over the sauce. 4. Cook for 2 1/2 to 3 hours at 350*F. 5. Serve and enjoy!
Ingredients: Boneless Rump Roast (3-3 1/2 lbs) 1 tablespoon Olive oil 8 slivers fresh garlic Salt & pepper Red wine or water or beef stock (for the gravy) 1 tablespoon corn starch Fresh thyme (optional)
Directions: ROAST *remove roast from refrigerator 1 hour prior to preparation; keep it wrapped* 1. Preheat oven to 375°F. 2. Make 8 small incisions around the roast with a sharp knife. Place a sliver of garlic in each incision. 3. Spread Olive oil around the roast. 4. Sprinkle salt & pepper around the roast. 5. Place roast on an oven rack, fatty side up, with a drip pan beneath. Place in oven at 375°F for ~30 minutes. 6. Lower oven temperature to 225°F. Cook for additional 2-3 hours. 7. When roast is brown on the outside, check the inside temperature with a meat thermometer. Once internal temperature reaches 135°F-140°F, it is done baking. 8. Cover with aluminum foil and let cool for 15-20 minutes. 9. Carve, serve and enjoy!
GRAVY 1. Remove drip pan from oven and place on stove top at medium heat. 2. Add red wine, water, OR beef stock (based on your preference) to the drippings. 3. Dissolve corn starch in some water and add to drip pan. Stir quickly. 4. Add butter if necessary; add salt & pepper and fresh thyme to taste. 5. Cook for 5 minutes; pour over roast beef slices and enjoy!
Oven-baked Beef Ribs
Ingredients: 3 lbs short ribs or flanken 1 large can sliced pineapples (with juice) water salt & pepper
Directions: 1. After washing the ribs, sprinkle salt & pepper for flavor and arrange them in a baking pan. 2. Pour in pineapple juice; add water so that ribs are fully covered. 3. Arrange pineapple slices on ribs. 4. Marinate at least 2-4 hours; place in refrigerator if marinating overnight. 5. Cook for 2.5-3 hours at 350*F. 6. Serve and enjoy!
